'Empty the Fridge' Fried Rice
Some nights I just need a quick, easy meal. This is my go to meal many nights of the month, especially when I have produce in the fridge that is starting to turn.
This recipe can be completely modified to fit your tastes and family's preference. I listed what we have in our fried rice most of the days, but you can add or remove anything you would like!
Roasted Butternut Squash and Onion Pizza with Swiss Chard and Goat Cheese
When I originally prepared this pizza, I did most of the prep during nap time. In that time I:
- got my butternut squash and onions ready
- infused my oil
- got my dough ready to rise
- got the squash and onions into the oven
- and had a chance to clean up a bit
The Feast of the Seven Fishes - Christmas Tradition
Today I am sharing over at Today is the Best Day my Christmas Traditions. Growing up, my family always celebrated the Feast of the Seven Fishes on Christmas Eve. We still continue the tradition on the first weekend of December with my cousins and their families.

Crock Pot Applesauce
I know I already started with the Christmas stuff, but yesterday was WAY too cold here in Pennsylvania, so I'm taking it back to fall!
I love apples year round, but in the fall I love the colors, the crisp sound and taste when you bite into an apple and I especially love homemade applesauce.
I had a friend who's mom used to make it from scratch. It was so delicious and I'm sure to her it was worth the hours it took to peel, core, steam, stir, flavor, press and can. I don't have time for that! This is where the crock pot comes in.
I start with an 8 lb bag of apples. I peel and core all of the apples. Here is my tip for peeling apples: You heard of the Rachael Ray "trash bowl" right? Well, I take that to another level. Loved the idea, hated washing another bowl. I place the bag that the apples {or any produce that I am peeling} came in inside the bowl. This way, all of the mess ends up in the bag, you were throwing away the bag anyway, and no bowl to wash!
There are two ways to core an apple we have found: a) my husband does it with an apple corer b) I can never get it right so I quarter and slice on a diagonal to take out the core.
Chop the apples up and place in the crock pot with a stick of cinnamon, 2 lemon peels {less if you do less apples} and juice of a lemon {again, less if you do less apples}. Stir up and set crock pot for 6 hours on low.
When it's done, you can either whisk it up {for chunky applesauce}, use an emmersion blender {I find they never blend it as well}, or put in a blender.
I whisk the batch up for my husband to have and take about half and add to the blender. I blend this for my daughter, for her oatmeal in the morning, and freeze in an ice cube tray.
The applesauce lasts about 3 weeks in the fridge in an airtight container. {Bad blogger - don't have after pics - maybe I can add them next time I make it!}

Butternut Squash Soup Crock Pot - It's What's for Dinner
I don't like to do two food posts, but this soup needed to be shared!
Our CSA {Community Supported Agriculture} is coming to an end for the year. We have stocked up on winter squash and I needed a good crock pot dinner. This recipe had been watching me from my Pinterest board, so I decided to take the plunge.
This recipe comes from Two Peas and Their Pod. It is amazing!
I usually follow directions to the letter when I make them the first time but I did modify just a tiny bit.
- I added 1 more apple. We like a sweeter butternut squash soup {and my baby girl did too!}.
- I blended mine in a blender. I find when I use an immersion blender, I still get really big chunks.
- With the chickpeas, I cooked them just a bit less than the directions. They roasted VERY quickly in my oven and even taking them out after 30 minutes they were almost charred.
What I love about this recipe:
- The chickpeas really bring a great texture to the soup. And they were a great snack the next day.
- The sweetness with the butternut squash worked really well together.
- The texture of the soup was amazing!

Crock Pot Stuffed Peppers
I love fall for the crisp weather, pumpkin everything and crock pot meals! I am sharing my most popular recipe among my friends.
Stuffed peppers are my dad's favorite meal. I made these for my family when we were having them over after going to our local orchard for apple picking, pumpkin picking and apple cider doughnuts,
Crock-Pot Stuffed Peppers
Makes 4-5
4-5 green or red peppers (however many will fit in your crock pot)
1 lb. ground beef
1/2 onion
1 cup frozen corn
1 cup any cheese
1/2 tsp Worcestershire Sauce
1/2 tsp garlic powder
salt and pepper to taste
1 - 15 oz can tomato sauce

Crock-Pot Stuffed Peppers

1/2 tsp Worcestershire Sauce

1 - 15 oz can tomato sauce
Directions:
1. Place peppers in crock pot to make sure they fit.
2. Slice the tops off {reserve them if you want to serve the peppers with the tops on - I did this to be fancy} and remove the centers. Rinse and dry. While you are doing this, brown the ground beef in a saute pan.
3. Mix ground beef, onions (I had some scallions so I just threw them in), corn, cheese, Worcestershire, garlic powder, salt, pepper and half can of sauce in a bowl.
4. Stuff the peppers with the filling and top with remaining sauce. Add 3 Tablespoons of water into the bottom of the crock pot.
5. Cover and place on high for 3 1/2 hours or low for 7 to 8 hours.
These were such a hit with my dad! We served with rice and it was perfect!

Dinner Party: Hummus from Around the World
We have dear dear friends who are finally expecting! They have been through so many trials on this road and we are so so happy for them that they are officially in the second trimester!
We had a dinner party planned before they made their announcement. They are complete foodies so I was so excited it was our turn to host so I could finally get inventive and get cooking for the first time in a long time! So as the day approached, I followed pregnant girl protocol - what are you eating these days?
The response {exact words} "cold stuff like hummus and salads"
My text response, "Great!" My thought response, "What am I going to serve at this dinner party?"
I talked with the hubby about options. I had drawn up a couple of menus, all consisting of things my friend could eat and more fall, warm foods for everyone else. My husbands words will FOREVER change the way that I look at menu planning for people, especially pregnant ones.
The words of wisdom: "When you were pregnant, how did you feel when people were eating something you couldn't have or didn't want to have?"
Great..now I feel terrible. His solution:

So I started planning..2 days before our company arrived. It was definitely not enough time to make all the different hummus and any other fixings. So I compromised. I purchased the hummus that was our favorites and made the salads and hummus that I had never had before. I know your not supposed to try new things, but I always try new things with dinner parties. Worst case - you order pizza or Chinese :).

Tuscan Hummus - Italy: I purchased Sabra Tuscan Garden Hummus, but would have used this recipe.
Red Lentil Hummus - Middle East: I purchased Giant Brand Red Lentil, but would have used this recipe.
Edamame Hummus - Oriental: I purchased Eat Well, Embrace Life from BJ's Warehouse, but would have used this recipe.
Black Bean Hummus - Mexico: I purchased Eat Well, Embrace Life from BJ's Warehouse, but would have used this recipe.
Garlic Lovers Hummus - Just For Fun: {Seraphina's favorite} I purchased Cedar's from BJ's Warehouse, but would have used this recipe.
Coconut Curry Hummus - India: I used this recipe, but Hope Foods has this flavor if you can find it near you. {Tip: for the recipe, I ended up adding half of the can of coconut to cut the curry enough. My suggestion is either cut a Tablespoon of curry or add the extra coconut milk.}

Tzataiki - Greece: I found this recipe hard to decipher. So this is my recipe:

And just for her husband {and an extra for you}, here is my Iced Tea recipe :)
Not too Sweet Tea
4 c. of water
4 black tea bags {we use decaf}
1/3 c. Turbinado Sugar {I'm sure you can use the same amount of granulated}
Mint
Extra Water
1. Boil water then turn off and add tea bags. Let steep 25-30 mins.
2. Put Sugar and Mint into pitcher and add tea. Stir well.
3. Add water to top of pitcher - approx. 6 c.
4. Chill and enjoy!

1/2 English cucumber or 1 Whole Cucumber, seeded and grated
16 oz. Plain Greek Yogurt
1 clove of garlic, minced {I use a garlic press}
juice of 1/2 fresh lemon
2 T. extra virgin olive oil
1 T. white wine vinegar
1/4 - 1/2 c. dill
salt and pepper to taste
- squeeze grated cucumber in cheesecloth {I used double layer of paper towels}
- add with yogurt, garlic, lemon juice, olive oil, vinegar and dill. Fold carefully to combine.
- Taste then salt and pepper as needed.
Chilled Soup
Beet and Celery Soup - served along with the horseradish sour cream and chives {which was a hit by the way. I don't care for horseradish and it tasted just as good with plain sour cream}
Dessert
For dessert we went to Whole Foods and just got an assortment of pastries and some dark chocolate salted caramel truffles {which I am enjoying as I type}.

It made my day when my friend said, "I literally can eat everything on the table and it all looks good!" We sent her home with several kinds of hummus, olive tapenade and the leftover soup - which she had 2 servings of here!
