I don't like to do two food posts, but this soup needed to be shared!
Our CSA {Community Supported Agriculture} is coming to an end for the year. We have stocked up on winter squash and I needed a good crock pot dinner. This recipe had been watching me from my Pinterest board, so I decided to take the plunge.
This recipe comes from Two Peas and Their Pod. It is amazing!
I usually follow directions to the letter when I make them the first time but I did modify just a tiny bit.
- I added 1 more apple. We like a sweeter butternut squash soup {and my baby girl did too!}.
- I blended mine in a blender. I find when I use an immersion blender, I still get really big chunks.
- With the chickpeas, I cooked them just a bit less than the directions. They roasted VERY quickly in my oven and even taking them out after 30 minutes they were almost charred.
What I love about this recipe:
- The chickpeas really bring a great texture to the soup. And they were a great snack the next day.
- The sweetness with the butternut squash worked really well together.
- The texture of the soup was amazing!
